    We tend to have the concept of being a vegetarian, or worse yet, vegan, implies eating a diet based only on vegetables, salads and the like. The truth is that adopting a different eating style than the one we are used to, is always a process. Even if you are already a vegetarian, to become vegan you must also do it gradually. “For people who are vegetarian, and want to start a process towards veganism, this is easier for them. Eating a diet based on salads and vegetables only, makes the process much more difficult. That is why at La Raíz de la Tierra the menu consists of conventional dishes such as omelets, enchiladas, hot cakes, and even hamburgers and tacos! All prepared with tofu, supplements and other things,” says Zoyla Luz, who is in charge of the restaurant branch on Cuadrante 5.

    For San Miguel to have a transitional vegan restaurant represents a great opportunity for all those who care about the environment, but who also want to eat dishes that they like. It also makes the process less complicated. “The idea is to make people see that you can eat a rich and healthy diet without harming the planet or any living being,” explains Zoyla.

    La Raíz de la Tierra arrived in San Miguel six months ago, and is here to stay. They bring the experience of many years of preparing delicious and healthy dishes in the different chain restaurants they have throughout the country, such as the one in Ixtapa Zihuatanejo. Their goal is to place 100 chain restaurants throughout Mexico in order to make this approach to a healthy and ecological lifestyle more accessible.

    From 8am and until 12pm, the menu consists of classic breakfasts. For those diners who have eaten at La Raíz de la Tierra, what stands out as their favorite dish for breakfast are the Enchiladas Suizas. They are made with a corn tortilla, stuffed with vegetables and bathed in a green sauce with a potato-cheese that is a house recipe. Also the huevos a la Mexicana.

    After 12pm they transition to lunch and then dinner. The menu then is made up of a variety of main dishes, among which stand out the hamburgers, and the Santa Fe Burrito. The latter is filled with rice, tofu, pico de gallo and refried beans. There is also the Today’s Bowl. This varies according to the seasonal vegetables and fruits available, with a base of rice, marinated tofu, sweet potato and other items. Something else you will notice is that this restaurant will show you that eating well does not have to be more expensive than normal. All their prices are accessible and compatible with the quality of its ingredients.
