    One of the most classic desserts of Christmas Eve is the panettone, whos origin dates back to Milan, however, it has conquered a good part of the tables of Latin America, although its conception, legend has it, was as a result of an accident.

    It is said that in the fifteenth century, one of the cooks of a duke in Milan Ludovico Sforza “The Moor”, called Antonio, fell asleep when he was cooking all day for his patron, so the dessert he had prepared was burned, taking the dough that he had set aside to make a Christmas bread, which he supplemented with ingredients found in the cupboard: eggs, flour, butter, citrus, candied fruits and grapes.

    The recipe was a success and Sforza himself called this “Toni’s bread”, or “pane di Toni”, which was gradually changed to “panettone”.

    This dessert has another origin, which speaks of the young aristocrat named Ughetto Atellani de Futi, fell in love with the daughter of a pastry chef from Milan and to taste his love, he posed as an apprentice baker, who baked a sweet bread in the shape of a dome, with aromas of lemon and orange, as well as candied fruits, which resulted in a success within this bakery, where people asked for it as “Toni’s bread”.

    Panettone arrived in Mexico thanks to Giovanni Laposse, known for being the creator of garibaldi, favorite sweet bread of many Mexicans, who collaborated with the El Globo tea room, to market these desserts, although at present there are many offers to try the panettone.

    One of the favorite bakeries to try this delicious baked bread is Panio, based in San Miguel de Allende and with deliveries throughout the Mexican Republic and is prepared with Sourdough, wheat flour, egg, butter, orange jam, sugar, candied citron and raisins.
