    Swap your bowl of cereal for a scoop of ice cream, this recipe with Lucky Charms is easier to make than you might think.

    There are some cereals we can’t get enough of, and yes, Lucky Charms is one of them. We’re big fans of their colorful marshmallows, and we know how tempting it is to eat them all, but the next time you have a box of this cereal at home, we recommend saving those colorful edible figurines to make your own Lucky Charms ice cream. Here’s the recipe, and don’t worry if you don’t have an ice cream maker, as you’ll just use a regular mixer and freeze it overnight.

    Spoiler Alert: It tastes as good as it sounds!

    INGREDIENTS:

    • 2 ⅔ cups whole milk.
    • 1 tablespoon + 2 teaspoons cornstarch
    • 4 tablespoons softened cream cheese
    • ⅛ teaspoon of fine sea salt
    • 1 ½ cups heavy cream
    • ¾ cup sugar
    • ¼ cup light corn syrup
    • 4 cups Lucky Charms with marshmallows
    • ½ cup marshmallow fluff
    • Frozen mold/container (recommended to place in refrigerator a couple of hours before starting recipe)

    INSTRUCTIONS:

    1. In a bowl, mix 1⁄4 cup milk with the cornstarch. Let stand.
    2. In a medium saucepan, mix the remaining milk, heavy cream, sugar, syrup, and salt. Bring to a boil over medium-high heat and cook for five minutes, watch carefully as it will boil quickly.
    3. Add the cornstarch mixture and then return to a boil, stirring constantly until thickened, about three minutes.
    4. Place the softened cream cheese in a bowl and pour in 1⁄4 cup of the hot milk mixture.
    5. Beat until completely smooth and there are no lumps in the cream cheese.
    6. Add it back into the main mixture and stir everything together. Stir in the vanilla.
    7. Place the mixture in a covered container in the refrigerator, it should be completely cooled.
    8. Pour the mixture into a bowl and stir until thickened, add the marshmallows and four cups of Lucky Charms cereal, stir several times until fully incorporated.
    9. Pour into a freezer-safe container and let stand for a few hours, or even overnight in the freezer.
    10. Serve and enjoy, you can garnish with extra marshmallows.
