In San Miguel de Allende, during the Lenten period, traditional cooks usually sell their food that is prepared with ingredients from the storm field.
As are the cooked quelites, the picadillo of nopalitos cooked with coriander, onion, tomato and serrano chili, the vitualla (of cabbage, chickpeas, tomato and carrot), the nopalitos with chickpea in red caldillo, the chiles stuffed with cheese, the potato and shrimp pancakes, the famous pipian or even a pico de gallo, a picadillo that has as its main ingredient the xoconoztle, in addition to its onion, chili, tomato and coriander.
All these stews can be found with the food vendors in front of the Oratory, and traditionally every year on Fridays of Lent outside in the atrium of this temple, a while in the morning for anyone who goes to passion mass, like to buy these delicacies.
