Winston’s is a new concept for San Miguel. They offer only Certified Angus Beef, imported from the United States, both dry-aged and regular wet-aged. The dry-aged beef has a full 30 days in a temperature/humidity-controlled chamber. Dry aging allows the beef to develop a rich nutty flavor while becoming more tender during the process. There will be two options for cooking your choice cuts: grilled over a Mesquite wood fire or at your table atop a searing hot block of Himalayan pink salt. The tableside option is not only fun, but the salt imparts an incredible mild salty mineral flavor. Appetizers will range from jamon Bellota and caper salad to pulpo a la Gallega. The steak cuts are simple rib eye, rib eye bone in, or New York strip—and none will be less than 500 grams, (1.1 pounds).
Winston’s is located on Prolongación Cuesta de San Jose 101. Tim Inscore is the owner and chef. His former endeavors include Cafe Iberico on Mesones and La Pata Negra Spanish restaurant in Querétaro. His focus as a chef has always been quality, and Winston’s is certainly all about quality. The restaurant is small, and a high level of quality and service are maintained. Their goal is to present the best ingredients that are available and prepare each of them with perfection.
