Among the vast culinary offer offered by San Miguel Allende, there is a place on the heights, a restaurant that has a beautiful view of this city and that monthly organizes a “Starry Night”, a dinner that, inspired by the famous homonymous painting by Van Gogh,combines the pleasures of life through art, music and gastronomy.
In this way, the Trazo 1810, located on the third floor of the Casa 1810 Boutique Hotel, offers visitors and locals a night panorama of the city, to enjoy a dinner paired with high-end wines, live music and the presence of artists who perform their works before the eyes of diners.
For this “Starry Night”, chef Irving Cano, who heads the kitchen of Trazo, had a special guest, chef Hugo Sandoval, who heads the kitchen of Hacienda San Lorenzo, home of Casa Madero, in Valle de Parras, Coahuila; together, they prepared this four-course dinner, in which attendees felt transported to the magical and colorful world of Van Gogh.
Chef Sandoval was in charge of several dishes: shrimp tostadas with lemon seasoning; marrow risotto with parsley chlorophyll, wine reduction and bell bread; short rib terrine with borracha sauce, purple cabbage puree and pickled nopal, as well as pear tarte tatin with schezuan pepper and mascarpone ice cream.
The host chef, Irving Cano, opened the dinner with foie gras with corn puree and fig jam; he then alternated his dishes: kampachi crudo, seawater, seaweed, mandarin, furikake and fig oil; grilled cauliflower with white chocolate, pink pepper, artichoke mole and truffle oil; and japanes cheese cake with cardamom ice cream, cucumber, shiso leaf and umebosh, with the dishes prepared by chef Sandoval. Each time was accompanied by a different Casa Madero label, which for this special night was present in each dish.

After the presentation of his dishes, Chef Sandoval thanked his host for the invitation, for the opportunity to offer a bit of his gastronomy.
“Thanks to Casa 1810 and chef Irving Cano, who opened their doors to make this dinner together, each one prepared four dishes, for my part I brought a little of what we do in Casa Madero, we brought the northern side with French-Mexican touches; my school was in France and Spain, and on the Mexican side it was in Pangea, with chef Guillermo González Beristain”, he said.
He added that for this night “I was inspired to bring a little bit of Parras, from my state of Coahuila, and talking with the chef we created a dream. We use local ingredients with the regionalization of dishes we make in the north, such as marrow risotto, which is a very northern product, tonight’s was a fusion of international cuisine with a touch of our wines chosen by our sommeliers.
Chef Irving Cano commented that Trazo 1810 is the terrace from where painters paint the different domes in San Miguel, as it is a place that has a 360 degree view, which is why this restaurant bears that name.
“Now we want to give it an identity, the reason for that name, at the end of the day gastronomy, as well as painting and music, can complement each other to offer a different experience and what we do is invite local artists and different chefs to present their proposal, such as chef Hugo Sandoval and Casa Madero winery, we really enjoy this participation. For this year we will have many guests, we are in talks with Roberto Ruiz -from Madrid-, chef Fernando Martinez Zavala, Vicente Torres, Diego Tellez from Guatemala, among others”, said Irving Cano.
