At  the age of 12, Les Carmona entered the world of food preparation and service, spurred on by his desire to experience flavors and experiment with recipes and techniques. Fulfilling a lifelong dream, at the age of 40 he  enrolled in a technical college in Chicago to earn a degree in baking  and pastry arts. One year in, Les seized the opportunity to study in  rance at La Varenne Ecole du Cuisine, which launched his new career as  Pastry Chef, first for a Relais and Chateau property in Montecito,  California, then in the wine country of Napa and Sonoma. 

Feeling  about 107 years old measured in Chef Years, he and his wife moved to La  Paz, Baja Sur where he opened a European-style bakery and pastry shop, In  2015, just after becoming a Mexican citizen, Les and family moved to  San Miguel de Allende, Mexico where he continues his exploration of food  and culture.
