Mexican Country Cooking Classes
with Patsy Dubois
Welcome to my world – cooking and sharing!
Mexico, Mexicans and their culinary delights enrich my life. Food, recipes and cooking are very close to my heart and a great part of my life. I was born in Washington, D.C. to a son of a French Immigrant, and my mother was a Bostonian lady whose family could be traced back to the Mayflower explorers.
I grew up in Tulsa, Oklahoma and spent summers Swampscott, a town located outside of Boston. Studied in Oklahoma and received my Bachelor’s degree in both Art and Education. In 1970 earned my MFA in the Instituto Allende in San Miguel Allende. Taught Art and Elementary education classes in Tulsa, San Miguel, Queretsro and Mexico City.
My Mexico City teaching led me to a lasting friendship with the Miguel de la Madrid family and later having the opportunity to live in the Presidencial Residence with the family.I did not work for the President, Don Miguel, but in a Business with his son Miguel Jr. What an experience for an Oakie!
Returning to San Miguel in 1988, I was a personal assistant for a lady who owned a large horse ranch and had 30 employees. During this time, I also became a project manager for remodeling homes, building several from the ground up and a couple of boutique hotels. It was so much fun creating!
Now to my love of Cooking. My father placed me in front of a gas stove, perched on a wooden box (I was very small) and told me to learn to cook. I was learning to read! I cooked all the time while living at home. My mother did not know how to cook nor wanted to learn.
I want to thank some of the people who encouraged me on my culinary path. Nell Fernandez (the owner of the Instituto Allende); The military chefs at Los Pinos(the presidencial residence); Bill Porter from San Francisco who changed and encouraged me to reach higher (I called him my Uncle Billy), Carol Phillps (The founder and CEO of Clinique) and Mildred Weismann (wife of CEO of Phillip Morris and later devoted his time to improving Lincoln Center). They were all there to help.
I began giving Mexican Cooking in my little Adobe house on my ranchito in 1994. In 2004, I built a very large open kitchen restaurant followed by an events center. There I gave Mexican cooking classes, held events and cooked Sunday Lunches. With the help of my waiters , we catered many events and parties in San Miguel I stopped in 2022 when I sold a large part of my ranch which now is a winery and events center.
Did some personal building and now I am ready to share my cooking skills again with new friends and cooks. I have decided to do my classes in 3 different ways.
- Completely hands on
- Part hands on and preparation before
- 0r I can be your personal chef and you can enjoy a wonderful day and delicious meal in the county side.
Each class is personally designed to your likes. We can work together on this. Weather permitting, swim in my pool with water from my well which is natural hot springs. Hope you can join me in this culinary adventure!
