Wine enthusiasts and experts know that one of the states they are giving what to talk about is Guanajuato. Such is its impact, which has hosted important international competitions such as the Concours Mondial de Bruxelles 2024.
On the historical importance of the state in terms of wine production, it should be noted that they support it over 400 years. Currently, in this state there are approximately 300 hectares dedicated to love for vines.
It’s time to talk about Hacienda San José Lavista, one of the most appreciated vineyards in San Miguel de Allende for its dedication to wines and romance. Just 25 minutes from the city center Heritage, this property extends over more than nine hectares. After crossing its great gate, its seven hectares of vines planted around the facilities and the production center.
The history of this vineyard began in 2010. What would be a hacienda for the retirement of the architect José Seoane evolved into a wine project orchestrated by the winemaker Hugo D’Costa, multi-awarded personality and with recognitions such as the Editor’s Choice Award at the Food and Travel Reader Awards for his legacy in the wine industry.
To portray this space, one of the most beautiful vineyards in San Miguel de Allende, suffice it to say that it inspires a lot of romanticism. It was one of the first wine houses in bet on weddings as part of your proposal; the chapel, surrounded by a small lake with ducks and aquatic flora, seems the scene of love stories.
As for architecture, they were inspired by the materials used in old haciendas: high ceilings, vaults, adobe and solid walls that revive the Mexican colonial style. It has two houses: one dedicated to the bride —The Main Helmet—, whose rooms bear names of deadly sins; and another, the Guest House, designed for the groom, with rooms that name the virtues. In total, total 14 suites, usually rented when unions are held.

Among green landscapes, we met who work with mycorrhizae —live fungi in the roots — that help the vines to absorb more nutrients. Do not use pesticides or agrochemicals, and choose to natural methods to control pests, such as the use of olive trees that act as indicators. Further, do not buy external grapes: they bet on maintain quality rather than increase production. A good harvest it goes from 20 to 30 thousand bottles a year, and in a complicated one, from 10 to 15 thousand.
Of course there are tours of this vineyard in San Miguel de Allende. It opens its doors to the public through reservations to offer visits ranging from plantations to production area and cava, until culminating with the tasting labels on your terrace with 360 view°, accompanied by a cheese and fruit table to play with pairings.
During the tour, the sommeliers share details about each stage of the process. For example, they explain that their favorite grape is the malbec, which represents more than 60% of its production. They also show the four wooden barrels where the reds ripen, which acquire a silky or peach skin sensation thanks to polished tannin; its aging lasts 12 months and its reserves 24.
